SO-KI soba (spareribs noodle)

So-ki is a specialty of the cuisine of Okinawa Prefecture. It's stewed pork spare ribs, with the cartilage still attached. They are often served with Okinawa soba - so called "SO-KI soba" And Okinawa soba is type of noodle soup eaten in Okinawa. They use thick wheat noodles (resemble udon), and the soup is more similar to ramen.

Yaeyama soba (local noodle)

Yaeyama soba is using slightly flat noodles than Okinawa soba, and the soup flavored usualy with konbu(seaweed), katsuobushi flakes and pork. There are many kind of Yaeyama soba recently. But at Umicoza, we try to keep the original recipe of Yaeyama soba.

Taco-rice is a popular cuisine of Okinawa and it's a Japanese dish. Taco-flavored ground beef served on a bed of rice(instead of tortilla chips), served with lettuce, tomato, avocado, cheese and topped with salsa&mayonnaise.; Umicoza's taco meet are using half Ishigaki beef! Sometimes serve with local herb or local vegetables that we got on the day. The flavor and hotness are daily adjusted for guest on the day by Akko-san, with choice of spices & balance of mixture.

Origin of chicken rice is a Chinese - Hainanese chicken rice, we cook with Umicoza's way! Boiled chicken on special flavored rice wich cooked with chicken, vegetable soup and jasmine tea, served with fresh tomato, cucumber, go-ya(bitter cucumber), lady finger, basil leaf and deep fried bread. Topping sauce can choose from chinese style or chili sauce.
